Easy Instant Pot Creamy Potato Soup
When it comes to Florida weather you never if it’s going to be cold or hot that day. These winter months have been a bit confusing. One day we’re in the ’80s and the next we’re back to the ’50s. I feel like Florida is very confused right now and doesn’t know what to do. Lucky for me I love a good instant pot soup recipe no matter the weather.
This creamy potato soup is my favorite and it’s super easy to make in your instant pot.
That’s why I just had to share this delicious and easy recipe. This instant pot recipe perfect for those busy nights. Even just to make when you’re craving something hearty and cozy.
Creamy Potato Soup Ingredients
- Instant Pot or Crock Pot
- 10 large russet potatoes, peeled and diced
- 1 small onion, diced
- 4 cups of chicken broth
- 4 tablespoons of unsalted sweet cream butter
- 3 teaspoon of minced garlic
- 1 teaspoon of kosher salt
- 1 teaspoon of pepper
- 1 cup of heavy cream
- 1/3 cup of sour cream
- 2 tablespoons of corn starch
- 1 cup of sharp cheddar cheese, shredded
Instructions for Instant Pot Potato Soup
- Add your diced potatoes, diced onions, chicken broth, seasonings, and butter to your Instant Pot.
- Place the lid on top, lock and set the valve to sealing.
- Set the pressure for 5 minutes.
- Do a quick release to release the pressure.
- In a small mixing bowl whisk the heavy cream, sour cream, and the corn starch together.
- Stir into the soup.
- Mix in the sharp cheddar cheese.
- Press the saute button and cook the soup (while stirring) until the soup thickens.
- Use an immersion blender to blend the soup to make a smooth and creamier consistency.
