Ingredients Needed
Cream Cheese Banana Filling
- 1 egg
- 1/4 cup of sugar
- 8 ounces of cream cheese at room temperature
- 1 teaspoon of vanilla extract
Bundt Mixture
- 3 cups of all purpose flour
- 2 teaspoon of baking soda
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of salt
- 1 stick of unsalted butter at room temperature
- 1 cup of sugar
- 1 teaspoon of vanilla
- 1/2 cup of brown sugar
- 3 eggs at room temperature
- 3 ripe mashed bananas
- 1/2 cup of milk (we use non-dairy Soy Milk)
Cream Cheese Filling Instructions
- In a bowl with a paddle attachment mix together your cream cheese and vanilla. Transfer to another bowl and set aside.
- Using another bowl add your eggs and slowly add your sugar, mixing for about 2-3 minutes. Pour in a different bowl and set aside.
Preparing your bundt recipe
- Preheat your oven to 350 degrees.
- In a clean bowl sift all of your dry ingredients flour, baking powder, salt, and cinnamon.
- With a mixing bowl beat together your sugar, butter, and vanilla. Adding eggs one at a time.
- Peel your bananas and smash with a fork, then add to your mixing bowl along with your milk and mix until all ingredients are combined.
- Slowly add flour mixture, while making sure that all ingredients are completely being combined using a low setting.
- Time to add your cake and cream cheese banana filling in your pan. (I personally like to add a bit of butter on the edges of the pan so that it gives the cake a bit of butter flavor and it helps it from not sticking on the pan)
- Pouring only half of your cake mixture into the pan gently add your cream cheese banana mixture right over the cake mixture. Gently smooth the cream cheese so that it’s all spread out, but you are not mixed into the cake batter.
- Pour the rest of your cake mixture right over your cream cheese. Making sure it’s all covered up.
- Bake your oat bundt cake at 350 degrees for about 55 to 60 minutes. To double check insert toothpick to make sure cake is completely cooked, not cream cheese filling.
- Allow your cake to cool for about 20 minutes before flipping over on a cake rack.
I wanted to try out some toppings, so I decided to add the same topping that I made for my Flan recipes a few months ago. To check out how to make the crumbled cinnamon topping click HERE.
