Ingredients Needed For Chicken Salad
- 3 chicken breasts shredded (cooked in Instapot (20 minutes) or Crock-pot (6 hours) or Cooked rotisserie chicken)
- 2 cups of chicken broth
- 2 tablespoons of ranch seasoning packet
- 4 strips of bacon cooked (I prefer to bake)
- 1 cup of cheddar cheese
- 1/3 cup diced onions
- 1/3 cup diced scallions
- 1/2 cup of sour cream
- 1/2 cup of mayonnaise
- Udi’s Gluten-Free Multigrain Bread (or your favorite sliced bread or wrap)
How To Make A Loaded Chicken Salad
This loaded chicken salad recipe is super easy to make and won’t make much of a mess, which is my favorite type of recipe.
As you all know, I’m all about easy and fast!
What I love about this chicken salad is that you could easily cook your chicken in your Instapot, Crock-pot, or even purchase a pre-cooked rotisserie chicken.
Just make sure to add some chicken broth to make the chicken juicy and tasty.
Trust me, it makes all the difference!
Also, add your ranch seasoning packet to your chicken.
This will bring out some great flavors in your chicken salad.
- Once your chicken is cooked, turn off your Crock-pot and allowing the chicken to sit in the juices until it cools down. This will help your chicken to absorb all of the broth. Plus, check out my crockpot shredded chicken recipe.
- Once cooled you can shred your chicken using two forks.
- In a large bowl, add your shredded chicken, bacon, cheddar cheese, onions, scallions, sour cream, and mayonnaise.
- Using a spatula or wooden spoon, gently mix everything together until combined.
- Then spread the desired amount on your Udi’s bread, wrap, or serve as an appetizer.

This chicken salad recipe is keto-friendly just as it’s made.
You can certainly eat it with keto made cloud bread or your favorite keto homemade bread.

The best way to store your chicken salad would be in an airtight container in the refrigerator.
You can store your chicken salad in the refrigerator between 2 and 3 days.
If you find that your loaded chicken salad is a bit dry, just add a little bit of mayonnaise before eating or serving as a dip.

Ingredients
