I love recreating recipes that I remember eating as a child back home in Puerto Rico. This Bolitas de Queso recipe, which translates to cheese balls was one of my favorite appetizers ever! Every restaurant from back home serves them in their menu and sometimes I crave some of those flavors. This is my version of the recipe with a side of Mayo Ketchup.

Do you ever crave foods from your hometown or city? That’s exactly what happens to me all the time! I’ll admit, that I can probably recreate a recipe from back home, but the craving comes from my childhood memories. Just sitting down with a plate of these Bolitas de queso brings me back home when I was a little girl. It’s an easy recipe to create and I can guarantee that you will be making these all the time at home.

Bolitas de Queso Puerto Rican Recipe

Ingredients:

  • Sharp Cheddar Cheese
  • 1 Egg
  • 2 tablespoons of flour
  • Pinch of chipotle pepper
  • Saltine crackers crushed
  • Vegetable Oil
  • Ketchup
  • KRAFT Mayonaise
  • Garlic salt

Cheese Balls Recipe

Instructions

  • Combine your shredded cheddar cheese, egg, flour, and chipotle pepper in a bowl with a fork. Make sure that everything is completely combined and mixed together.

  • Using your hands thoroughly finish combining the cheese mixture together.
  • Roll into small balls and place on a clean plate. You can really make them any size you would like. I like to roll them into golf ball size balls because it’s the perfect amount of cheese and is easier to fry.

Cheese Ball Recipe Appetizer

  • Crush your saltine crackers as thinly as you can using a blender or a mallet.
  • Roll your balls in the cracker crumbs until completely coated. This will help in sealing in the cheese for frying.

  • Fry each Bolitas de Queso in the vegetable oil. You want to cook them until they turn a golden brown. They do not take very long to cook, so make sure to stay close by and keep an eye on them.

Tip: If you prefer not to fry, they taste delicious in the Air Fryer too!

  • Lay your Bolitas de queso on a sheet of paper towel to allow the excess oil to drip off.

Mayo Ketchup Recipe

  • 1 part ketchup
  • 2 parts mayonnaise
  • Chopped fresh garlic or pinch of garlic salt

In a bowl mix together the ketchup, mayonnaise, and garlic. Mix all ingredients well together. Now you have created what we call in Puerto Rican Mayo Ketchup! Let it sit in the refrigerator while you cook the res of your cheese balls.

Fried Cheese Balls Recipe

Mayo Ketchup is a dipping sauce we use with many different things such as french fries, sorullitos (friend corn sticks), and tostones (fried plantains, not the sweet ones). It really is the perfect dipping sauce for anything fried! Give it a try and let me know what you think!

Yum! Fried Cheese is very popular here in Costa Rica too but they don’t have Cheddar. It’s a white cheese. I think these little bolitas would be so yummy!
