One of my favorite recipes to make when I’m not feeling well or the nights begin to cool down is a delicious pot of chicken vegetable soup.
Not only is this soup going to become one of your favorite comfort meals during the winter, but it’s so easy to make.
I don’t know about you, but I just can’t live without my crockpot.
It makes my life so much easier being able to just throw in all of my favorite hearty ingredients and allow it to simmer until I’m ready to enjoy it.
Plus, you can easily create your own variation of this chicken vegetable soup by adding some of your own favorite ingredients.

Ingredients Needed To Make Vegetable Bean Chicken Soup
I’m all about simple recipes in our home, especially during the week.
Our girls have a full schedule with school, dance rehearsals, and choir practice. So, making sure that I plan ahead on those busy nights is extremely important to me.
Don’t let the long list of ingredients overwhelm you, it’s a crockpot recipe, so it’s about dicing and dumping in the pot.
- 1 can Cannellini beans (15 oz)(rinsed and drained)
- 1 can White Northern beans (15oz) ( rinsed and drained)
- 1 can Garbonzo beans (15 oz) (rinsed and drained)
- 1 can diced tomatoes (15oz) (reserve juices)
- 1 carton chicken broth (32 oz)
- 1 1/2 cups of carrots (diced)
- 1 1/2 cups of celery (diced)
- 1 1/2 cups of sliced mushrooms
- 1 cup of onion (diced)
- 1 rotisserie chicken (skinned and shredded) – You can also add chicken breast and later on during the cooking process pull out and shred
- 3 garlic cloves (minced)
- 2 bay leaves
- 1 sprig rosemary
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1 teaspoon of dried basil
- 1/2 teaspoon of red pepper flakes
- salt and pepper (to taste)

How To Make Chicken Vegetable Soup
You may love the fact that this recipe is as simple as cutting up all of your veggies, poultry, and dumping all of it into your slow cooker.
That’s why it’s one of my favorite winter recipes to make.
- Add all of the ingredients except for the garnish in the crock pot.
- Cover the crockpot and cook on high for 3-4 hours or on low for 6-8 hours.
- Prior to serving top with sliced green onion.
How Long Will Soup Last
Another great thing about making a large pot of vegetable soup is that it will last for about 3-4 days in an airtight container in your refrigerators.
You can also freeze soup to enjoy later on. I usually suggest freezing for no more than 3 months in your freezer.
Just make sure to again use a special freezer-safe airtight container or freezer bags made especially for this.
Can I Substitute Ingredients
Oh, absolutely! The best part about a vegetable chicken soup recipe is that you can add any of your favorite ingredients and herbs.
Replace beans as you see fit too or don’t add them at all. It’s your recipe and you want to cater to what your family will love to eat.
Can I Use My Insta Pot To Make This Chicken Herb Soup Recipe
Yes! Simply layer all of your vegetables on the bottom of your Instant Pot, add your chicken on top, and then your beans.
Sprinkle all of your seasonings on top. Add your Instant Pot lid, and set your pressure valve to the sealed option.
Cook your hearty herb chicken soup on high pressure for 10 minutes. Once it’s done allow to sit for an additional 5 minutes while your Instant Pot is off.
How Can I Make This One-Pot Soup Recipe Gluten Free
The best way to make sure this chicken bean soup recipe is gluten-free is by using fresh beans, instead of canned ones.
Sometimes the additives in canned beans that are added for flavor contains gluten.
How Can I Make This Slow Cooker Soup Recipe Keto-Friendly
Keto is all about maintaining a low carb count and high fat.
My suggestion is to omit all of the beans in the recipe and keep the vegetables to a minimum so that you keep your carb count low.
You can also use vegetables like broccoli, zucchini, and spinach.
These are great substitutes for keto-friendly vegetables.
Oh, and don’t skim on the seasonings!
