Breakfast for dinner? My family loves having breakfast for dinner on occasions and my girls absolutely always get to choose what toppings will be used in our dinner pancakes. I always try to make homemade as much as I can and I knew that these Homemade Strawberry Chocolate Chips Yogurt + Paypal Giveaway Pancakes were absolutely were going to be devoured in my home! Sure enough, I was right!
I wanted to try something different with our pancake recipe and when I came across Yoplait Original 25% Less Sugar yogurt I thought it would be perfect for our homemade healthier version of pancakes. Not only did they taste better, but they had a fluffy soft texture to them. Everyone, included both of my girls absolutely loved them!
The best part is that they are super easy to make and any left overs can be refrigerated for the next morning or even used as a waffle mix.
Ingredients needed to create your own yogurt pancakes:
- 2 cups of all purpose flour
- 2 teaspoons of baking powder
- 1 tablespoon of sugar
- 1/2 teaspoon of salt
- 2 tablespoons of vegetable or coconut oil
- 2 large eggs
- 1 teaspoon of vanilla
- 2 Yoplait yogurt 25% less sugar in your favorite flavor (we used strawberry)
- 3/4 cup of soy milk
- Fresh fruit cut like strawberries, blueberries, or peaches
- Syrup or honey
- Chocolate chips
- Butter
Step One: Preheat pan and melt some butter.
Step Two: Whisk together all of you dry ingredients like salt, sugar, baking powder, and flour.
Step Three: Mix together all of you wet ingredients like your yogurt, eggs, vanilla, and oil
Step Four: Add your dry ingredients into your wet ingredients, mixing together. Make sure not to over mix. You want a little bit of lumpiness in your mix. This is what allows your pancake to rise and become fluffy.
Step Five: Fold cut fresh fruit and chocolate chips into your batter.
Step Six: Cook on buttered pan for a few minutes or until you see edges begin to look cooked and browned.
Step Seven: Top with more fresh fruit and your favorite syrup or honey!
I honestly didn’t realize how fluffy and soft these pancakes were going to turn out! I’ve used different types of fruit in my batter before, but adding the strawberry yogurt Yoplait definitely made such a difference in texture and taste!
My girls want me to do blueberry next, so I’m off to Publix tomorrow morning to get some fresh blueberries and some more Yoplait Original 25% Less Sugar Blueberry Yogurt for our pancakes! Before I head on out I’m going to make sure to print out my Coupon over at readyplansave.com
