- Perdue Harvestland Boneless Skinless Chicken Breast Tenderloins diced or Diced Chicken Breasts (comes free with your first order)
- 1/2 cup of sliced carrots
- 1 garlic clove diced
- 1/2 cup of frozen peas
- 1/2 an onion diced
- 1 cup of bean sprouts (optional)
- Pinch of salt and pepper
- 1/3 cup of soy sauce
- 1 tablespoon of Mirin (it’s a rice wine)
- 1 tablespoon of your preferred oil (I use coconut or olive oil)
- 2 eggs
- 4 cups of cooked white rice cold (not hot)
- Diced green onions for over chicken fried rice when serving
How To Make Chicken Fried Rice
Once you have gotten all of your ingredients ready, it’s time to cook up some quick and easy fried rice.
My first tip would be to either use leftover white rice from earlier in the week if it was on your menu plan or cook the rice earlier in the day.
You want your rice to be cool or cold when making fried rice. This will help with firming the rice. So when you cook it with all your veggies, it doesn’t turn mushy or soft.
- Using a wok or a pan on medium heat, cook your diced chicken until completely cooked. Sprinkle a pinch of salt and pepper.
- Scoop out cooked chicken and set it aside on a clean plate.
- Add a bit more oil to your pan and scramble your egg.
- Scoop out your scrambled eggs and set them aside with your chicken.
- With more oil on your pan, saute garlic, carrots, and onions.
- Add chilled white rice to the pan and mix together with vegetables.
- Allow the rice to fry for a few minutes.
- Add cooked chicken, egg, and bean sprouts to your rice mixture.
- Pour soy sauce and Mirin rice wine over the ingredients.
- Stir everything together and allow the rice to fry for a few more minutes.
- Serve in a bowl and topped with diced green onions.

Do I Have To Use A Wok For Fried Rice
You don’t have to use a wok for cooking fried rice.
A pan would work just fine in cooking all of the ingredients.
My favorite reason for using a wok when cooking fried rice is that the heat is evenly spread, and I make less of a mess when tossing all the ingredients together.
Plus, it makes me feel more legit!
My electric wok was a wedding gift, and it still works amazing! Should I mention that my hubby and I will celebrate 13 years of marriage in March?

Can I Store Fried Rice
Absolutely! Store your chicken fried rice in a closed container in your refrigerator for 2 to 3 days.
It makes the perfect leftover for the next day!
Just heat up in a microwave-safe container and enjoy another day of this delicious recipe!
I always make extra, so my husband can take some to work for a few days.
How Can I Make This Chicken Fried Rice Recipe Keto
You can easily make keto-friendly chicken fried rice by replacing the rice with cauliflower rice.
The instructions are exactly the same, but instead of adding rice to your vegetables, go ahead and add cauliflower rice to keep it low-carb but still tasting delicious.

Make this easy and quick Chicken Fried Rice Recipe on busy weeknights! Even the kids will love this fried rice!
Ingredients
