Strawberry season is upon us and my family loves picking their own! A beautiful field filled with tons of yummy strawberry, is the perfect day in Spring! Here is a yummy Strawberry Crumble Bars recipe that you can make with some delicious strawberries!
Strawberry Crumble Bars
Strawberries are my youngest daughters favorite fruit. Although, she really would eat any type of fruit, this is her ultimate favorite! So much so that when we go strawberry picking I have to bring an extra bottle water so that she can wash them and eat them right there and then! I don’t blame her though, they taste so yummy fresh.
Ingredients needed:
- 2 1/2 cup of flour
- 1/2 cup of sugar
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking powder
- 1/2 cup unsalted Sweet Cream Butter softened
- 1 large egg
- 1 teaspoon of vanilla
- 2 cups of cut strawberries
- 2 teaspoon of cornstarch
Preheat the oven to 375 degrees.
Grease an 8×8 baking pan.
In a medium bowl, stir together sugar, flour, baking powder and salt.
In a small bowl, beat the egg with the fork.
Add the egg and vanilla to the flour mixture.
Using a fork cut the butter into the flour mixture.
Work with the dough until the pieces are very small.
Dough will be crumbly.
Pat half of the dough into the bottom of the pan.
In another bowl, stir together the sugar, cornstarch.
Add in the diced strawberries and stir to combine
Spoon the strawberry mixture evenly over the bottom crust.
Spread the strawberry mixture evenly over the crust
Crumble the remaining dough over the strawberry filling layer.
Bake for 40 minutes.
Cool completely before cutting into squares.

My mother in law always made strawberries with sugar on them and would spoon them onto broken, and baked, pieces of homemade pie crust. Then she’d top it with whipped cream. She called it “strawberries and crust”.
She’s been gone since 2009, but I still make it for my husband.
