Growing my abuela used to live with us and I remember many times when I didn’t feel good she would make my favorite chicken soup! I used to love watching her cut up all the veggies and create her yummy recipe! Now as an adult I still love that recipe, but as busy as I am I sometimes just don’t have the time to make things from scratch, so this Semi-Homemade Arroz Con Pollo Soup Recipe is the closest I have gotten to my abuela’s recipe when I’m on a time crunch!
Semi-Homemade Arroz Con Pollo Soup Recipe
Making this recipe this past week really did bring back many memories of my abuela and the countless of times I sat on her bed talking to her about everything! She was my closest confidant and many don’t know that! So creating this semi-homemade chicken rice soup recipe was kinda in her honor, plus with it being Hispanic Heritage Month in October is was perfect!
I headed to my local Albertsons to pick up all the ingredients I needed! Now, because I was planning on making a semi-homemade recipe I went ahead and picked up some Progresso Chicken Noodle Soup, I know what you’re thinking, but that’s already all made for you. Yes, but if you want a little bit of hispanic flavor in it, just like my abuela used to make this is the perfect starting point for all the other ingredients that will be added! While there I also picked up some more veggies, protein to add, plus some yummy dessert items!
Ingredients needed to create your own arroz con pollo recipe:
- 2 cans of Progresso Chicken Noodle Soup
- 1 potato diced
- 1 container of chicken broth
- 2 chicken breast sliced or cut into small pieces
- 1/2 cup of long grain rice
- 1/2 cup of peas
- 1/4 cup of cilantro chopped
Step One: Peel and dice your potato. Add your chicken broth into a pot on high heat, then add your potatoes to boil for about 15 minutes.
Step Two: After your potatoes have boiled for a bit go ahead and add your chicken noodle soup cans and cut chicken. Allow to boils for a few minutes and then lower temperature on low. Allow to cook for about 45 minutes.
Step Three: Add your rice and cilantro to your soup.
Your soup can be on low until you are ready to eat, so I suggest adding the rice 15 minutes before you are ready to eat. Once you are ready to add your rice, add your cilantro at the same time because they will take the same amount of time to cook.

Simply cut up your favorite fruit combos, dice, and add to your Yoplait Greek 100 Vanilla yogurt! Not only is this simple, but oh so delicious and the perfect light dessert after a filling soup dinner!
This soup recipe is also a wonderful recipe to keep handy when that fall and winter cool months arrive! Perfect for a quick and warm meal!

Hi Leanna! I add the chicken raw, but I make sure to cut into small cubes so that the chicken cooks all the way faster. Hope that helps 🙂

I had some chicken breasts that were already cooked, so I used about 1 1/2 cups. I didn’t have any cilantro so I chopped up some celery leaves and added a little more rice & peas. It was delicious. Thank you for the recipe.
