I love creating fun new recipes for my family, but sometimes I spend hours in the kitchen and my girls won’t even touch the food. So lately I’ve been trying to create fun recipes with simple ingredients that they love to eat daily. I have to say that it definitely worked! This Mexican Pizza with Homemade Refried Beans and Creamy Avocado Dressing Recipe was a hit in our home! Especially with my pickiest eater and with the Publix Flavor Excursion Sale I just had to try it out!
Mexican Pizza with Homemade Refried Beans and Creamy Avocado Dressing
This recipe is really easy to make and the ingredients are things that you would normally have in your home already. Plus, if you don’t send the hubby to Publix without having to worry that you are asking him for some specialty ingredients! At Publix you will find everything that you need to make this delicious and fun family night meal!
Ingredients needed from Publix to create your Mexican Pizza Recipe:
Homemade Refried Beans:
- 1 bag of Pinto Beans
- Crockpot
- Half an onion chopped
- 3 Garlic cloves minced
- Water
- 1 cup of chicken or vegetable broth
- 1 1/2 teaspoons of cumin
- 1/2 teaspoon of chili powder
- Salt and Pepper to taste (at the end)
Mexican Pizza:
- 1 box of Old El Paso Soft Taco Dinner Kit
- Ro*tel® Mild
- Kraft® Natural Shredded Cheese
- Ground turkey cooked
Creamy Avocado Dressing:
- 1/2 an Avocado sliced or chopped
- 2 garlic cloves minced
- 2 tablespoons of chopped fresh parsley
- 1/3 cup of mayonnaise
- 1/2 cup of buttermilk
- 1 cup of sour cream
- 2 teaspoon of lime juice
- 2 teaspoon of extra virgin olive oil
- Salt and pepper to taste
Homemade Crockpot Refried Beans
To make your own refried beans is actually very simple and it really takes no time at all! I personally have made them both on the stove and in my crockpot, but definitely prefer them in my crockpot. It basically cooks itself and you don’t need to soak the night before.
Step One: Wash and rinse your beans. Pour into your crock pot and add enough water to cover beans. Add your chopped onions, garlic, cumin, and chili powder. DO NOT add your salt and pepper yet. The salt will not allow your beans to soften. Let them sit for a few hours, but keep your eyes on them because you will need to add more water in just a bit.
Step Two: Once you see that the water has gone down go ahead and add your 1 cup of chicken or vegetable broth to the beans. Add water to the remaining until once again beans are covered. Allow to cook for the rest of the day 5-6 hours.
Tip: If you are in a hurry, you can set your crockpot on high for less cook time. It will still work! I’ve done it.
Step Three: Once your beans are fully cooked and soft you can either add to a blender until smooth or just use a handheld blender.
Tip: If you think there is too much liquid in the pot, go ahead and take some out. Don’t throw it away just in case you need it to water down beans once pureed.
Creamy Avocado Dressing
In a blender add your avocado, garlic, parsley, mayonnaise, buttermilk, sour cream, lime juice, olive oil, salt, and pepper. Blend until nice and smooth. I like to pour it into a bottle with a thin nozzle just so that I can nicely pour it over the Mexican Pizza once cooked!
Refrigerate to keep cool.
Mexican Pizza
Step One: Cook your ground turkey and add Old El Paso seasoning packet.
Step Two: Preheat your oven at 375 degrees. Add your tortillas on a cookie sheet and bake for about 2 minutes on each side. You want them to be crispy, but not burnt.
Step Three: Spread a layer of your homemade refried beans on one of the baked tortillas and then sprinkle some of the ground turkey on top. Do this to all the bottom layers of you tortillas.
Step Four: Cover your beans and meat with another tortilla. Spread some of the sauce from your Old El Paso Kit right on top and sprinkle with you Kraft® cheese. Add them all back in the oven until the cheese is melted.
Step Five: Add some of the Ro*tel® tomatoes over your melted cheese, drizzle with your creamy avocado dressing, and top with a few slices of avocado.
I love making this recipe because although there are a lot of steps, it really doesn’t take that long! The beans cook themselves and the dressing takes 2 minutes to blend together! All you have to do is put together your pizzas once everything is cooked! Easy and fun family dinner served!

I’m getting “page not found” from the Flavor Excursion link (tried twice!) but the Mexican Pizza you made looks fantastic! I might try substituting refried black beans and adding cilantro to change it up a bit!
