One of the things that my family and I love doing every week is a family movie night! Last week Disney Pixar’s Inside Out movie was released on DVD and Blu-Ray, giving us the perfect opportunity to make some fun and colorful Homemade Sugar Cookie Ice Cream Sandwiches inspired by our 5 favorite Emotion Characters! Homemade Sugar Cookie Ice Cream Sandwiches
We love making our own homemade ice cream and sugar cookies from scratch! It’s actually easier than you might think too and such a fun recipe to do with the family. Especially creating the sandwiches! Just warning you, things might get a bit messy!
I headed to my local Target to pick up the Inside Out Movie on Blu-Ray and all the ingredients I needed for our cookies and ice cream! Best thing about heading to Target is that they have their own brand Market Pantry, amazing taste at lower prices!
The Disney Pixar Inside Out Movie can be found either in the movie section or in a stand in front of the store at your local Target. Don’t worry, you won’t be able to miss this colorful display! Plus Inside Out DVDs and Blu-Rays purchased at Target includes 20 minutes of exclusive bonus content and deleted scenes, including Riley’s First Date! Which my girls have watched over and over again!
My girls were super excited when I surprised them with an Inside Out Sugar Cookie Ice Cream Sandwich family night! Although I tried to make it a surprise, they spied the DVD as soon as I walked in the door!
We started our movie night party by making our homemade vanilla ice cream.
Ingredients needed to make homemade vanilla ice cream:
- 2 Cups of Heavy Whipping Cream
- 14 Ounce can of sweetened condensed milk
- 1 tablespoon of pure vanilla extract
Seriously, this recipe is so yummy and super easy to make that you will be making it all the time!
Step One: In a small bowl pour out your sweetened condensed milk and add the tablespoon of vanilla extract. Stir and combine.
Step Two: In a mixing bowl add your 2 cups of heavy whipping cream and whip on high for a few minutes until you see peaks forming.
Step Three: With the mixture on low slowly add the vanilla condensed milk combination to the heavy cream until combined.
Step Four: Pour into a freezer safe container and allow to freeze for at least 8 hours.
While your ice cream freezes to the perfect consistency you can start baking your Inside Out inspired sugar cookies! My girls absolutely love cutting out these cookies, especially because they don’t need to wait for them to chill before hand.
Ingredients for sugar cookies:
- 3 cups of all purpose flour
- 2 teaspoons of baking powder
- 1 cup of granulated sugar
- 1 cup of softened butter
- 1 teaspoon of vanilla extract
- 1 egg at room temperature
- Food coloring in red, green, purple, yellow, blue, and green
Step One: Preheat oven to 350 degrees
Step Two: In a bowl mix together your 3 cups of flour and baking powder together. Set aside.
Step Three: Add your room temperature butter and sugar to your mixture. Mix until it’s nice and fluffy.
Step Four: Add vanilla extract and egg to mixture. Mix until all ingredients are combined.
Step Five: With your mixture on low slowly add your flour and baking powder into the mixing bowl until a ball is formed.
Step Six: Kneed your dough for a few seconds and then section into 5 pieces.
Step Seven: Divide each section of sugar cookie dough in a small bowl. Add 2-3 drops of each food coloring. You will end up with cookie dough, each inspired by the 5 emotions from Inside Out.
My girls decided that they wanted to make flower shaped cookies because it remained them of Joy. You can really use any type of cookie cut out that you would like.
Step Eight: Roll out each cookie dough color and cut out your shapes.
Step Nine: Bake in the oven at 350 degrees for about 14 minutes. Set aside and allow to cool completely.
Step Ten: Using the homemade ice cream you made spread ice cream on one side of your sugar cookies and sandwich together. Sprinkle with the appropriate color for some extra fun!
Now time for the fun part, eating them all up while watching Inside Out!
Being able to sit down and create such amazing memories with my family is very special to me! Being able to spend time as a family on movie nights are a blast, but when the movie itself is loved by both children and adults it makes the time that much more fun!
