Classic Carrot Cupcake Recipe with Maple Frosting
This Classic Carrot Carrot Cupcake recipe is perfect for celebrating fall and to bring along to family events. I can guarantee that the flavors are so delicious that you will be the hit of the party!
Ingredients needed for Classic Carrot Cupcakes
- 2 cups of Flour
- 3/4 cups of Granulated sugar
- 3/4 teaspoon of Baking soda
- 1 1/2 teaspoon of Cinnamon
- 1/2 teaspoon of Nutmeg
- 1/2 teaspoon of Cloves
- 2 tablespoon of Ground ginger
- 1 tablespoon of Allspice
- 3/4 teaspoon of Salt
- 3/4 cup of Brown sugar
- 8 tablespoons of Butter at room temperature
- 1/4 cup of Angry Apple Cider
- ½ cup of Buttermilk
- 2 Eggs
Ingredients needed to create maple frosting
- 2 sticks of unsalted butter at room temperature
- 3 teaspoon of vanilla extract
- 1/3 cup of caramel sundae topping
- 2 tablespoon of Angry apple cider
- 3 3/4 cups of powder sugar
Instructions for Carrot Cupcakes
- Preheat oven to 350F. Starting with the cupcakes, line cupcake pans with cupcake liners. To make it fun choose seasonal liners or event liners for your event.
- Using your mixer blend all dry ingredients in a large bowl until well incorporated. Pour into another bowl and set aside.
- Mix eggs, cider, buttermilk, and butter at low speed until all wet ingredients are blended together.
- Slowly begin to add all dry ingredients to wet ingredients mixing on medium. Once all ingredients are combined beat at medium speed for 2 more minutes.
- Add batter to cupcake pans filling to 2/3 of the way full. Bake 18-21 minutes until a toothpick inserted in center of the cupcake comes out clean of batter. Set aside and allow to cool for 15 minutes. Remove cupcakes and cool completely before frosting.
- To create the frosting add the butter in your mixer bowl adding the vanilla, salt, Angry apple cider and caramel mix on medium for several minutes. Making sure that everything is mixed well together.
- Begin adding your sugar and mixing thoroughly after each addition. Continue to mix until frosting begins to form peaks and is well combined. You should get a soft and creamy consistency.
- Using a frosting bag and tip decorate your yummy carrot cupcakes with your maple frosting.
