Ingredients Needed For Cookie Recipe

- 3/4 cup or 12 tablespoons of softened butter
- 1/2 cup of Karo® Corn Syrup
- 3/4 cup of brown sugar
- 1 egg
- 2 1/2 cups of all-purpose flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 package of granola crackers or about 1 cup
- A cup of semi-sweet chocolate chips
- 1 cup of mini marshmallows
How To Make Chewy S’mores Cookies
If you think that a s’mores cookie is just like s‘mores, then you are correct! It’s pretty much the same concept. Instead, you add your graham crackers, chocolate chips, and marshmallows to your cookie batter recipe.
Adding all the ingredients together creates the same flavors we get when we roast marshmallows over a fire pit. You’ll even have the stickiness and gooeyness of real s’mores!
Plus, by adding Karo® Corn Syrup to your chocolate chip cookie recipe, you will create a chewier cookie on the outside and still soft in the middle.
- Take out your butter so it sits on the counter for a few hours. It would help if you had your butter at room temperature when ready to use.
- Preheat your oven to 350 degrees.
- Line baking sheets with parchment paper.
- Add your graham crackers to a baggie and lightly crush them with a rolling pin. You don’t want the crackers too powdery, just crumbly.
- Beat room-temperature butter and sugar together until fluffy. You may want to do this with a stand or electric mixer.
- Add your Karo® Corn Syrup, egg, and vanilla extract to your butter fluff.
- Mix your flour, baking soda, and salt in a separate bowl.
- Slowly add your flour mixture to the butter mixture while your mixer does all the work.
- Fold graham crackers, chocolate chips, and marshmallows into your flour mixture.
Don’t overdo it. You want to combine enough so that all the ingredients even out.
Now here’s the tricky part when it comes to your marshmallows.
You want enough, so the s‘mores cookie is gooey, but you don’t want any of your marshmallows on the outside of your cookie while baking.
When scooping up your cookie dough, ensure the marshmallows are inside or on the bottom. This way, they won’t caramelize.
Honestly, it’s not a big deal because this recipe still turns out amazing!
How To Freeze Cookies
One of my favorite tricks when it comes to making cookie recipes is making them ahead of time. This chewy s‘mores cookie recipe is perfect for freezing or refrigerating and baking later.
You can store your cookie dough in an airtight container or make individual cookie dough balls on parchment paper. This way, they roll out easily for baking.
