This quick Low Carb Cobb Salad is not only easy to make but oh so delicious.
That’s why I head to Publix to pick up all of my fresh ingredients including Tyson® Fully Cooked Grilled Chicken Breast Strips found in the refrigerated section.
Plus, I also picked up some Hillshire Farm® Lunchmeat Oven Roasted Turkey Breast in the lunchmeat aisle so that I had two proteins to choose during the week.
Eating low carb is pretty simple, you just need to know what ingredients you should always keep stocked in your home.
This way you’re not reaching for other items. This is why I love both the Tyson Refrigerated Fully Cooked Chicken and Hillshire Farm Lunchmeat.
Or I should say why we love them! My girls are always taking them to lunch for the perfect protein in their sandwiches, wraps, and roll-ups.
Why Is This Cobb Salad Low Carb
A traditional cobb salad includes items such as chopped green lettuce, tomato, crisp bacon, boiled eggs, chicken (or other protein of your choice), avocado, and chives.
Every fresh ingredient named above is low carb. Where you need to be more careful is with the dressing you use.
Make sure to read the labels to check the grams of carbs and sugar per serving.
Personally, I prefer to make my own low carb ranch dressing, which I will be sharing with you all soon.
Other than these ingredients, you can add or substitute ingredients on your cobb salad.
I also love cheese and it’s perfect for my low carb lifestyle, so I always end up adding it to my salads.
Salad Hacks
I love a good salad, but with such a busy schedule I don’t have time to create elaborate salads at the moment.
Instead, I prefer to have a few quick hacks that I do during the week to make sure that I’m all set for lunch or dinner time at home.
Here are a few of my salad hacks that will help you be your best self daily!
- Purchase Tyson Fully Cooked Grilled Chicken Breast Strips at your local Publix. These strips are already cooked and no need to spend hours in the kitchen.
- Try Hillshire Farm Lunchmeat Oven Roasted Turkey Breast shredded over your cobb salad when you want to switch your protein from chicken.
- Boil 1/2 of the egg container at the beginning of the week.
- Bake all of your bacon at the beginning of the week.
- Buy lettuce in bulk and chop into individual containers.
These simple yet effective salad hacks will help you stay on course when it comes to eating lunch and dinner every day.
Ingredients For Making A Cobb Salad
Not only does Publix carry all of my favorite fresh vegetables for my salads, but my go-to protein products as well.
- Fresh crisp green lettuce (romaine lettuce or iceberg lettuce)
- Tyson Refrigerated Fully Cooked Chicken Strips
- Crisp baked crumbled bacon
- Chopped or sliced boiled egg
- Diced tomatoes
- Freshly diced or sliced avocados
- Diced scallions
- Cheddar cheese or crumbled feta cheese (optional)
- Ranch dressing

How To Make A Low Carb Cobb Salad
Making your cobb salad low carb is all about preference. The most important thing is that you are purchasing fresh ingredients and trying to not make it complicated.
- If you have not done so earlier in the week, then bake your bacon in the oven and pre-boil your eggs.
- For this recipe, I’m using fresh crisp romaine lettuce to make my salad.
- Start off by washing, drying, and chopping lettuce. Then add to a plate or bowl.
- Dice bacon and sprinkle on salad.
- Once your eggs are boiled you can either chop or slice your eggs. Lay them on your salad.
- Add diced tomatoes on top.
- Freshly dice or slice avocados on the salad. You want to wait until you are ready to eat to slice the avocados, so they stay nice and green.
- Sprinkle cheese on top.
- Now add your protein like Tyson Refrigerated Fully Cooked Chicken Strips or Hillshire Farm Lunchmeat Oven Roasted Turkey Breast. I like adding my protein last because it’s my favorite part of the salad!
- Sprinkle some diced scallions on top and pour over your favorite or homemade ranch dressing.
