This year, I’m cooking more homecooked meals that are simple, but still delicious.

So, I hope you all are ready for lots of recipes!

I’ve fallen a bit off cooking home cooked meals for my family because of the busy season of our life we are in right now.

But that’s about to change!

I love cooking for my family and this buttery chicken recipe with I Can’t Believe It’s Not Butter!® from Publix is perfect for your weekly meal plan.

A homecooked meal under 30 minutes that even the kids love! Now that’s my kind of cooking!

Easy Chicken Butter Recipe Ingredients

Ingredients Needed To Make Buttery Chicken

I’ve kept this one-pan recipe simple to make it easier for those busier nights.

  • 1/2 a cup of softened I Can’t Believe It’s Not Butter!® Original spread
  • 4 chicken breasts diced (1 for each member of the family)
  • 6 cloves of garlic minced
  • 1 tablespoon of olive oil
  • 1/2 cup of chicken broth
  • 2 teaspoons of Italian seasonings
  • a pinch of salt and pepper to taste
  • 2 tablespoons of parsley
  • handful of spinach
  • 1 tablespoon of lemon juice (optional, but the zest gives it the perfect flavor)

How To Make One-Pan Garlic Butter Chicken

Do you know what my favorite part about this buttery chicken garlic recipe is?

It’s the fact that I only need one pan to cook all of my ingredients.

Even when you add some vegetables and starch to this recipe. You can easily cook it all together in one pot.

  • Dice the chicken breast into small bit-size pieces.
  • In a bowl combine about half of your softened I Can’t Believe It’s Not Butter! Original spread, Italian seasonings, salt, and pepper.
  • Add your diced chicken breasts into the butter mixture and coat the chicken.
  • Allow your chicken to rest while you get your side items ready. Our family loves green beans so at this time I will wash and cut the ends.
  • Heat the olive oil over medium heat in a pan, cast-iron skillet, or wok.
  • Add your chicken to your pan and cook until golden brown.
  • Remove chicken from pan and set aside on a plate or bowl.
  • Add the rest of your softened I Can’t Believe It’s Not Butter! Original spread, minced garlic, chicken broth, and spinach.
  • Bring to a simmer and return cooked diced chicken to the pan.
  • Add lemon juice, parsley, and combine.
  • Serve with your favorite side items.

Tip: It’s not necessary to dice the chicken in bite-size pieces to create this recipe. I just find that when I do, my daughters are more inclined to eat their protein.

My second tip is that if your kids don’t like spinach just scoop out their chicken before adding the spinach.

I Can’t Believe It’s Not Butter! Original spread is perfect for cooking anytime.

Made with real, simple ingredients from plant-based oils which are a source of good fats as well as a good or excellent source of omega-3ALA.

You all know that I love my low carb recipes. Especially if I can create a low carb recipe that my family will eat.

This recipe, if followed, is low carb. Just make sure you choose side items that are also low carb. I love cooking with I Can’t Believe It’s Not Butter! Original spread because it’s also gluten free and works great for low carb.

My family loves this recipe over buttered pasta, but to keep it low carb, I love it with fresh buttery zoodles.

Just sprinkle some parmesan cheese on top and you are all set.

The Best Garlic Butter Chicken For Family.

The Perfect Chicken Side Items

There are endless of side items that you can add to this one-pan chicken recipe.

Here are a few of our favorite chicken side items to make this butter chicken recipe a complete meal.

  • Green beans
  • Asparagus
  • Baked potato
  • Over salad
  • Vegetable medley (a mixture of your favorite vegetables)
  • Mushrooms (you can easily add them to your chicken at the end)
  • Roasted potatoes
  • Corn on the cob
  • Over pasta or zoodles
  • Rice

Can I Refrigerate This Garlic Butter Chicken Recipe?

One of the things that I like to do is make extra food when I cook dinner.

This way my husband can take some to work the next day and I have extra for lunchtime.

Simply store in an airtight container. I say to eat within 2 days to enjoy the flavorful fresh chicken.
