Ingredients

  • 12 eggs
  • 1 tbsp mustard
  • 1/2 cup mayo (more or less depending on your preferences)
  • Fresh chives - chopped
  • Paprika
  • Black Olives
  • Blue and Green Food Coloring

Instructions

  • Boil 1 inch of water and place eggs in a steamer basket and place in pan. Place a tight-fitting lid on the pan.
  • Boil on medium-low heat for exactly 13 minutes. Meanwhile, prepare a bowl of cold water for eggs to be placed in after they are done cooking.
  • When the timer goes off, move eggs into an ice bath for 15 minutes.
  • Peel eggs.
  • Fill a medium bowl with warm water and place a few drops of blue food coloring in it. Mix well.
  • Cut eggs lengthwise. Remove the yolk with a spoon and put aside.
  • Place the hard boiled egg whites in the colored water until they reach their desired color. Stir every few minutes to make sure color sets evenly. Remove from water and pat dry.
  • Meanwhile, mix the yolks with the mustard and mayo. First smashing with a fork, then using an electric mixer if needed to make them extra smooth. Add a few drops of food coloring to turn the filling green.
  • Fill each empty egg half with the desired amount of filling, spreading slightly over egg white to make a perfect oval alien head.
  • Put a few Tablespoons of mayo in a ziplock bag and cut a tiny piece off the corner. Squeeze three tiny ovals on each egg for the base of the alien eyes.
  • Finely chop a few olives, and place in the center of the alien eyes. Use sliced olives for the mouth.
  • Place a chopped chive in the center of the aliens head to finish off your Toy Story alien and bring him to life!

Notes

*You can also try using avocado to turn the filling green, however, it won’t be as vibrant and will need to be served immediately before they brown.
*The longer you leave the eggs in the color, the more color the rim will have.
* If you don’t have a steamer basket, don’t worry! You can still place the eggs in the pan with an inch of water and a lid and they will turn out just fine. It just makes life easier when removing them.
*You can alternate between simply garnished eggs and alien heads to add contrast to your platter - and save time!
