If you’re using canned tomato soup, you’ll want to use 1 large or 2 small cans. From the ingredients above you will need the boneless skinless chicken breasts, mushrooms, green onions, and seasonings.
Spray slow cooker with non-stick cooking spray. I love using extra virgin olive oil spray.
Add your can of diced tomatoes tomato sauce, chicken broth, minced garlic, heavy cream, and shredded parmesan so your slow cooker. Stir everything together. (If you’re using canned tomato soup simply add this to this crockpot.)
Lastly, add chicken breasts, mushrooms, green onions, and seasonings.
Cook on high for 3-4 hours or on low for 6 to 7 hours.
Before serving shred your chicken completely right in the slow cooker. The chicken will be nice and soft for easy shredding.
Optional: top with croutons, sour cream, cheese, and anything else your heart desires! This is also a dish that is delicious when served with white rice.
