When I first started dating my hubby almost 13 years ago one thing was for sure, he loved my cooking! To this day my wonderful husband complements me on everything I cook. This Spanish Omelette was one of the first breakfast recipes I cooked for him. I remember calling my mom and asking her how to make it :).
- Eggs ( I usually count two eggs per adult and one egg per child)
- Half an onion diced (family of 4)
- Cooked diced bacon ( I do one slice per person)
- Salt & pepper to taste
- 2-3 medium potatoes (diced)
- Olive oil spray
After I have diced the onions, bacon, and potatoes I add them to a medium to large skillet pan and sauté until bacon is crisp and potatoes are soft. While this is cooking crack your eggs in a medium bowl and whisk with a fork until they are nice and fluffy. Sprinkle in some salt and pepper to taste. Pour out the oil in the pan and add the bacon, onion and potatoes to the eggs.
Spray the pan with a little bit of olive oil if it needs it so the egg doesn’t stick. Pour everything in the bowl to the pan and cook on medium heat until the bottom starts getting a goldfish color.
Now here’s the tricky part :). Take a plate and slide the omelette in the plate. Holding the handle on your pan place it over the omelette. Slide the plate off the counter and flip into the pan. Now cook the other side for a few more minutes until golden brown.
